Pumpkin Spice Syrup for Lattes and Drinks

Autumn to me means a trip to the Fryeburg Fair (and my first cup of Pumpkin Spice coffee from Green Mountain Coffee. Dunkin Donuts and Starbucks both also do a Pumpkin Spice drink, made using a flavored syrup. It can often be purchased online, or straight from the store if they over order and have leftovers when the season is over. But making your own is way preferable. That way you can make sure there is actual pumpkin in it, not just pumpkin flavored chemicals.

The recipe below is a nice safe set of measurements. I didn’t follow it one bit, as I make gallons of simple syrup every year and thus feel safe diverging from a syrup recipe without it turning out weird. So long as you have adequate liquid and sugar in proper ratio you should be ok.

Pumpkin Spice Latte Syrup

  • 1 cup water
  • 3/4 cup granulated sugar
  • 1 1/2 Tbsp pumpkin purée
  • 1-2 tsp ground cinnamon (or 3 cinnamon sticks)
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves

Combine all ingredients in a saucepan and heat to a simmer. Simmer for 10-15 minutes or until syrup is desired consistency (remember it will thicken in the fridge a bit). Do not let it boil, keep to a simmer.

Allow syrup to cool slightly, then pass through cheesecloth or a fine mesh sieve to remove any large chunks of spices. Pour into a bottle or jar and keep refrigerated. It will keep for several weeks, if it lasts that long. Add as the last step in making a lattee, in your regular coffee or blended with milk (way better than nesquick even).

I used about 1/2 cup pumpkin pie mix (the can with everything but milk and eggs), 1 1/2 cups water,  1 cup white sugar, 1/2 cup brown/demerra sugar, a squirt of molasses, and fresh ground nutmeg, cinnamon and cloves to taste (didn’t write down the proportions). I also added a dash of vanilla extract. I then tinkered to taste and then strained it all. It takes some stirring before use and while drinking, but its dark and deep and rich. Stirred into a tall glass of milk its amazing.
